Case Study: Bistro Lotte

More Wine has been busy with a number of projects, notably our launch of our first direct to consumer BIB - Rogue Wines. Our expanding range of BIB and can wine was very well received amongst a sea of glass bottles at the SITT tastings in London and Leeds this Autumn. During the tastings I often referred to our favourite local where we invariably end up for lunch Bistro Lotte. Here is our case study:

More Wine supplies the majority of the wine to the incredibly popular Bistro Lotte, Frome. An evolving list of 5 whites, 1 rose and 5 reds (all from BIB!) are all poured by the glass or in carafes of various sizes, 250ml / 500ml and 1 litre. All very convivial for guests to consume and share; quick and easy for the team to pour. This is very much an authentic bistro wine list as over 30% of wine in France is sold in bag in box format. Perhaps counterintuitively there is a lack of snobbishness and pretense about this format of wine in France and indeed most of the rest of Europe.

Unlike keg wine which is very à la mode in London there are no expensive install costs for this format. We can help with the supply of our More Wine dispensing boxes to give a great aesthetic and a simple blackboard front to chalk up the wine. All wines are then simply dispensed by gravity, whilst being protected from ambient heat sources such as coffee machines, glasswashers or just a busy service environment.

Prevention of waste being formed is of course preferable to expensive collections, pressure on storage space for the waste prior to collection and the energy intensive recycling of the glass itself. The More Wine estimate of glass bottles prevented annually from the need for recycling by Bistro Lotte (an 80 cover restaurant) is at least 8000 or well over 3 tonnes of glass!!.

In conversation with Lotty recently we mused on the number of bottles which have been prevented from having to be recycled. Prevention of the waste being formed is of course preferable to expensive collections and energy intensive recycling of the glass itself. So finally here we go……since opening the More Wine estimate of glass bottles prevented from the need for recycling by Bistro Lotte is at least 5000 or well over 2 tonnes of glass!!

More Wine has teamed up with Terracycle in 2018 to ensure that no part of our packaging need ever end up in landfill. Our cardboard outers are readily recycled by all councils. Our customers can now return the plastic inners of our bag in box wines to us so that these can be reworked into other plastics. We even offer an ‘Eco-credit’ of £1 per returned bag to help ensure our customers are rewarded for doing so.

We are very proud to list a new entry level range of BIB wines from Bag in Box wine specialists – Cellier de Chartreux a co-operative in the south of the Rhone, near Avignon. The Instinct range of BIB wines is exclusively available from More Wine in the UK. All grapes are sourced from the co-operatives own growers and show great typicity of the region. A lively fresh white from Grenache Blanc, Clairette and Bourboulenc; a pale fruity and dry rose and a well bodied, full flavoured dark cherry red from Grenache, Syrah and Cinsault. The maître de chai creates this range with a tremendous amount of patience and know how. All wines are great for by the glass and are very drinkable at 12.5% ABV.

Instinct range is listed at £65 ex VAT per 10 litre BIB, equivalent to £4.88 per 750ml prior to scale discounts.
